Made at Home

I have so many things to smile about, and today I told Rich I am happy about homemade food. It makes me tickled and proud to have so much homemade stuff on hand. Right now we have homemade whole wheat bread, homemade zucchini-banana loaf, homemade pizza in the fridge, homemade chili, homemade pasta sauce and homemade pesto. I love that!
This is due in large part to the free time I get during Abby's naps or when Rich is home to play with her. Now that Abby is one, I feel like I have almost as much time on my hands as before she came along! It's amazing. She has just nestled herself right into our groove and now we all have balance -- and time to spare! Lucky me, lucky me. I hope I can keep it up in Whitehorse.
Tonight I am making homemade Sloppy Joes (no Old El Paso seasoning for me!) in which I get to use some of my fresh thyme (yahoo!), fresh garlic, bell pepper, celery, and onion. All on slices of fresly homemade bread! In your face, isolation: I can too eat fresh, healthy meals in Ross River on a regular basis! All it takes is planning and practice (and an increasingly independent baby who doesn't require me to personally feed her every 2 hours. Seems like eons ago!)

  1. You are most definitely one resourceful and creative mama! I only hope that I can do that when it is our turn to live in a isolated community. You'll have to give me pointers and tips!
